Breakfast Burrito Recipe

This breakfast burrito layers warm flour tortillas with scrambled eggs, crispy bacon, shredded cheddar cheese, hash brown patties, and salsa. The burritos are folded and toasted briefly in the oven to melt the cheese and toast the tortillas, resulting in a hearty combination of creamy eggs, crunchy bacon, and crispy potatoes wrapped in a soft tortilla. Ideal for a filling breakfast or brunch.

Ingredients

  • 4 Hash Brown Patties
  • 2 flour tortillas warmed, burrito sized
  • 1 recipe scrambled eggs
  • 4 trips Bacon crispy, cooked
  • 1 cup cheddar cheese shredded
  • 4 tablespoons salsa of choice
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat oven to 400˚F. Place hashbrowns onto a lightly greased baking sheet and bake for 6 to 7 minutes. Flip and continue to bake for an additional 6 to 7 minutes.Remove from oven and set aside.
  2. Place a warm tortilla onto a clean surface and top with half of the scrambled eggs.
  3. Top scrambled eggs with 1/4 cup shredded cheese.
  4. Top cheese with 2 bacon strips.
  5. Top bacon strips with another 1/4 cup shredded cheese.
  6.  Top shredded cheese with 2 hashbrowns.
  7. Fold the short sides of the tortilla inward, then carefully roll the burrito up.
  8. Set burrito onto a baking sheet, seam side down and repeat with remaining ingredients for the second burrito.
  9. Toast burritos in oven for 3 to 4 minutes, flip and continue to toast for another 2 minutes or until the shredded cheese melts. Remove from oven and serve.

Notes

  • Freeze un-toasted burritos wrapped tightly in parchment and foil for up to 3 months.
  • Reheat frozen burritos in the oven at 375°F for 15 minutes, then turn and bake 8-10 more minutes until heated through and cheese melts.
  • Toast burritos after rolling to create a crisp exterior and seal the filling inside.
  • Avoid adding too many wet ingredients to prevent soggy burritos.
  • Do not overstuff burritos to avoid filling bursting during rolling or baking.
