Breakfast Casserole with Ham and Cheese

This easy breakfast casserole with ham and cheese can be made in just minutes using things you likely already have at home! It’s delicious, great for feeding a crowd, and the perfect way to use leftover ham from the holidays!

Ingredients

  • 1 crescent roll sheet
  • 8 eggs
  • ½ cup milk
  • ½ tsp kosher salt
  • 1 cup shredded Mexican blend cheese
  • 1 tsp dried parsley
  • 8 oz ham diced

Instructions

  1. Preheat oven to 350 degrees.
  2. Open the crescent roll sheet and roll it out on the bottom of a 9x13 baking dish making sure to go up on the ends and sides of the dough.
  3. Combine eggs, milk, salt, cheese, and parsley in a large bowl. Whisk until well combined.
  4. Add diced ham and stir until distributed through the egg mixture evenly.
  5. Pour ham + egg mixture over top of the crescent roll sheet.
  6. Bake in the oven at 350 degrees for 35-45 minutes or until the eggs are totally set.
  7. Serve warm.

Notes

  • Can substitute any other shredded cheese for the Mexican blend cheese as desired.
