Ingredients

  • 3 large eggs
  • 4 cups cooked brown rice (short or long grain)
  • 1 small apple, diced
  • 1/2 teaspoon cinnamon
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped raisins, chocolate chips and/or walnuts

Instructions

  1. Preheat oven to 350 degrees and grease an oven proof pie plate with spray, oil or butter. 
  2. Beat the eggs in a large bowl. 
  3. Place the remaining ingredients into the eggs and stir to combine.  
  4. Bake for 45 minutes or until top is turning golden.
