Ingredients

  • 24 tater tots
  • 16 ounces pork breakfast sausage
  • 1 tablespoon flour
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 3/4 cup whole milk
  • 4 ounces cream cheese
  • 4 large eggs
  • 1 tablespoon unsalted butter
  • 4 slices American cheese
  • 4 tablespoons ketchup
  • 4 Large Hamburger Buns

Instructions

  1. Cook your tater tots according to the package directions (usually 400 degrees for 15 minutes).
  2. Add the pork sausage to a large skillet and cook on medium high heat, breaking it apart.
  3. Cook for 4-5 minutes or until fully cooked.
  4. Drain most of the excess fat, add in the flour and whisk well until the flour is combined and cook for 30 seconds.
  5. Add in the salt, pepper, cream cheese and milk and whisk together until the mixture is creamy and let cook for 3-4 minutes until it has thickened.
  6. Whisk your eggs in a small bowl.
  7. Heat a large skillet on medium high and add butter.
  8. When melted add the eggs and cook for 1-2 minutes, stirring once until set.
  9. Flip and cook an additional 15 seconds.
  10. To assemble: Bottom bun, eggs, slice of American cheese, scoop of sausage gravy, tater tots, ketchup, top bun.
