Brennan’s Oyster Soup
Brennan’s Oyster Soup is a creamy seafood soup made by simmering oysters with butter, celery, green onions, garlic, and flour as a thickener. Bay leaves and white pepper add subtle aromatics while the oyster liquor blends into a flavorful broth. The soup is served immediately after cooking without reheating.
Ingredients
- 1 cup butter
- 2 cup celery finely chopped
- 1 cup green onion finely chopped
- 1 1/4 cups flour
- 2 tablespoons garlic chopped
- 4 bay leaf
- 1 teaspoon white pepper
- 4 dozen oyster large, freshly shucked
- 12 cups oyster water oyster liquor plus water to make 12 cups
- 2 teaspoons salt
Instructions
- Melt the butter over medium heat in a six quart heavy saucepan, then sauté the celery and green onions until tender but not browned, stirring frequently. Gradually stir in the flour and cook five minutes longer, stirring constantly over low heat. Add the remaining ingredients and simmer for twenty minutes. Remove the pan from the heat and scoop out the bay leaves with a slotted spoon or a long fork; discard. Serve immediately. Do not reheat.
