Brioche French Toast
Brioche French Toast uses thick, stale slices of rich, buttery brioche bread soaked in a spiced mixture of eggs, cream, cinnamon, nutmeg, and vanilla. Pan-fried in butter until golden on both sides, this preparation creates a tender yet crisp toast with a creamy, warmly spiced interior. Served with syrup and toppings, it’s a classic sweet breakfast dish with a soft crumb and slight custardy texture.
Ingredients
- 8 lices brioche bread cut into 1 inch thick slices, stale
- 2 tablespoons butter unsalted
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 egg large
- 1 cup cream
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, whisk together: sugar, cinnamon, nutmeg, eggs, cream and vanilla extract. Whisk until the ingredients are well combined and the mixture is smooth.
- Transfer the sauce to a baking dish, and arrange the bread pieces in to soak. Soak for about 2 minutes on each side, the bread should absorb most of the batter, but it shouldn't be soggy all the way through.
- Preheat the griddle or place a large, non-stick skillet over medium-high heat. Add butter to the skillet and melt it.
- Add the soaked bread slices and cook for 2 to 3 minutes on the first side, or until it's golden brown. Turn and cook the second side until golden brown, about 2 minutes.
- Serve topped with butter, and drizzle with maple syrup with berries and whipped cream on the side.
