Brioche French Toast

Brioche French Toast uses thick, stale slices of rich, buttery brioche bread soaked in a spiced mixture of eggs, cream, cinnamon, nutmeg, and vanilla. Pan-fried in butter until golden on both sides, this preparation creates a tender yet crisp toast with a creamy, warmly spiced interior. Served with syrup and toppings, it’s a classic sweet breakfast dish with a soft crumb and slight custardy texture.

Description

The Brioche French Toast recipe begins by whisking together eggs, cream, cinnamon, nutmeg, vanilla, and sugar to form a smooth batter. Thick slices of stale brioche bread are soaked briefly on each side in this custard, absorbing the flavorful liquid without becoming overly soggy. The bread is then cooked in melted unsalted butter over medium-high heat until both sides develop a golden-brown crust.

Brioche's buttery, tender crumb provides a rich base that crisps up nicely, contrasting with the soft, custard-like interior flavored by warm spices and vanilla. This dish is typically served with additional butter, maple syrup, fresh berries, or whipped cream to complement the spiced sweetness.

Using slightly stale bread improves soaking without falling apart, and cooking over moderate heat ensures a fully cooked interior with a golden exterior. The balance of sweetness and spice makes this a comforting breakfast or brunch selection.

Ingredients

Servings
  • 8 lices brioche bread cut into 1 inch thick slices, stale
  • 2 tablespoons butter unsalted
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 egg large
  • 1 cup cream
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together: sugar, cinnamon, nutmeg, eggs, cream and vanilla extract. Whisk until the ingredients are well combined and the mixture is smooth.
  2. Transfer the sauce to a baking dish, and arrange the bread pieces in to soak. Soak for about 2 minutes on each side, the bread should absorb most of the batter, but it shouldn't be soggy all the way through.
  3. Preheat the griddle or place a large, non-stick skillet over medium-high heat. Add butter to the skillet and melt it.
  4. Add the soaked bread slices and cook for 2 to 3 minutes on the first side, or until it's golden brown. Turn and cook the second side until golden brown, about 2 minutes.
  5. Serve topped with butter, and drizzle with maple syrup with berries and whipped cream on the side.
