Ingredients

  • 2 large heads of broccoli cut into florets
  • 6 oz. Bacon cut into bite-sized pieces*
  • ½ cup mayonnaise
  • ⅓ cup Greek yogurt
  • 1 Tbsp. white wine vinegar
  • 2 Tbsp. sugar
  • ½ tsp. salt
  • ⅓ cup red onion finely sliced
  • ⅔ cup cranberries
  • 1 cup walnuts toasted

Instructions

    Cup of Yum
  1. Steam broccoli for 4-5 minutes in a steamer basket, or until it turns bright green. Place in a large bowl to cool and dab with a paper towel until completely dry.
  2. Cook bacon in a medium skillet over medium heat for 5-7 minutes or until cooked through. Drain bacon on a paper towel-lined plate.
  3. In a large bowl whisk together mayonnaise, yogurt, vinegar, sugar, and salt.
  4. Add cooked broccoli that has cooled to room temperature and toss until well coated.
  5. Stir in chopped onion, cranberries, walnuts, and cooked bacon pieces.
  6. Cover and chill broccoli salad in refrigerator for 1-2 hours, or up to overnight, before serving. Enjoy!

Notes

  • Since this broccoli salad contains both mayonnaise and Greek yogurt, it is VERY temperature sensitive. Do not let it sit out for more than 2 hours at room temperature or more than 1 hour when the temperature is above 80 degrees.
  • To Prep-Ahead: You can prepare it entirely and chill it overnight.
  • To Store: This dish will keep for up to 3 days when stored in the refrigerator between servings. However, after 24 hours the broccoli will begin to lose its crispness.
  • To Freeze: It is not recommended to freeze as the mayonnaise will separate.
