Broccoli Cauliflower Sausage Casserole

This casserole blends broccoli and cauliflower florets with browned smoked sausage for a hearty main or side dish. Ingredients

  • 1 pound broccoli florets
  • ½ pound cauliflower florets
  • 1 tablespoon olive oil
  • 1 yellow onion finely diced, small
  • 2 tsp garlic minced, fresh
  • 12 ounces smoked sausage sliced into 1-inch rounds, or andouille
  • 8 ounces cream cheese room temperature, cut into cubes for easier mixing
  • ½ cup mayonnaise
  • 2 cups Mexican blend cheese divided, shredded
  • 2 tablespoons Dijon mustard
  • ½ tsp salt sea salt
  • black pepper fresh cracked, to taste

Instructions

  1. Preheat oven to 400?F.
  2. Bring a large half-full pot of salted water to a boil. 
  3. Add broccoli florets and cauliflower florets to the boiling water and cook for 6 minutes. Drain and set aside.
  4. Add olive oil to a skillet over medium-high heat.
  5. Add onions and cook for 2 minutes.
  6. Add garlic and cook for 20 seconds.
  7. Stir in smoked sausage and cook for 3 minutes, or until browned on all sides, stir frequently to prevent burning.
  8. Set broccoli, cauliflower, and sausage mixture in a lightly greased 9 x 13 baking dish.
  9. In a mixing bowl combine cream cheese, mayonnaise, 1 cup shredded cheese, dijon mustard, salt, and pepper; mix until thoroughly incorporated.
  10. Pour the cream cheese mixture into the broccoli mixture. Stir around until everything is well combined. Add remaining shredded cheese on top.
  11. Bake for 12 to 15 minutes, or until cheese is melted and top is golden brown. Enjoy!
