Broccoli Cheddar Soup Recipe
Broccoli Cheddar Soup blends tender broccoli and grated carrots with a velvety base made from butter, flour, half-and-half, and chicken broth. The mix is seasoned with garlic, paprika, and black pepper before being enriched with sharp cheddar cheese. The result is a creamy soup with a balance of savory, cheesy flavors and soft vegetable textures, suitable for cozy lunches or dinners.
Ingredients
- 3 Tbsp olive oil
- 2 Tbsp butter unsalted
- 4 cups broccoli chopped florets
- 1 cup carrot grated
- 1/2 cup yellow onion diced
- 4 garlic minced, cloves
- 1/4 cup all-purpose flour
- 2 cups half-and-half
- 4 cups chicken broth (or any broth you like)
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1 1/2 cups cheddar cheese I use sharp, shredded
Instructions
- Add the oil and butter to a large soup pot and place it over medium-high heat. Once the butter is melted, add the broccoli, carrots, and onions. Cook, stirring occasionally, for 7-8 minutes, until the onion is translucent and the broccoli is soft.
- Add the minced garlic and flour. Cook, stirring often, for 2 minutes.
- Add one cup of the half & half. Stir until smooth. Repeat with the remaining half & half.
- Add the broth, salt, garlic powder, paprika, and pepper. Stir well. Bring the liquid to a simmer. Cook 5 minutes.
- Add the cheese to the soup. Stir until the cheese is melted and well incorporated.
