Broccoli Fritters
Description
The Broccoli Fritters recipe starts by finely processing broccoli florets with onion and cilantro to form a textured vegetable base. This is combined with chickpea flour and seasoning including salt, garlic powder, smoked paprika, and chipotle pepper powder to add depth and a mild smoky heat. A bit of oil and BBQ sauce are incorporated for flavor and binding. The mixture sits briefly to allow moisture to release, helping form cohesive patties without being too wet or dry.
Shaped into five to six patties, these are pan-fried over medium heat until both sides develop a golden, crisp crust while the inside remains tender. The contrast between the crispy exterior and moist interior showcases the broccoli’s natural texture enhanced by the spices. The fritters work well dipped in various sauces like sriracha, ketchup, BBQ sauce, marinara, or a cooling ranch dressing.
These fritters can also be varied using other vegetables such as cauliflower, carrots, zucchini, sweet potatoes, or squash, making them adaptable to what’s on hand. Smaller sizes serve well as appetizers, and they reheat well in the oven if made ahead.
Ingredients
- broccoli 2.5 + cups florets or 2 heaping cups shredded, a large bunch
- 1/4 cup onion chopped
- 1/4 cup cilantro packed
- 1/3 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp paprika smoked or regular
- 1 tsp chipotle pepper powder
- 1 tsp neutral cooking oil generic cooking oil
- 1 tbsp BBQ sauce
- 3/4 cup chickpea flour
Instructions
- Process the broccoli florets, onion and cilantro in a processor.
- Transfer to a bowl. Add the rest of the ingredients and mix. Mix well to distribute. Let sit for a minute or 2 for the broccoli to leak enough moisture so you can form patties. If it is too wet, add more flour. If too dry and does not stick well, wait for another few mins or sprinkle some water and mix and press to see if the mixture sticks.
- Shape into 5 to 6 patties. Heat a skillet over medium heat. Add a bit of oil and spread.
- Pan fry the patties for 4 to 5 minutes per side. Serve with sriracha, ketchup, bbq sauce, marinara or a cooling ranch.
Notes
- Adjust flour if mixture is too wet; add water for better binding if too dry and let it rest.
- Experiment with different vegetables like cauliflower, carrots, zucchini, or squash for variation.
- Make smaller fritters as appetizers or snacks.
