Ingredients
Broccoli Fritters:
- 3 cups broccoli chopped, fresh, 1-2 small bundles
- 1 large egg
- 1/2 cup all-purpose flour
- 1/3 cup Parmesan Cheese finely grated
- 1 medium garlic clove, minced
- 1/2 tsp kosher salt
- 1/4 tsp crushed red pepper flakes optional
- 2 tbsp vegetable oil for frying; examples: canola or olive oil
Lemon Yogurt:
- 1 cup yogurt plain, Greek
- 1/2 medium lemon juice and zest
- 1 tsp garlic minced, usually amounts to one clove
- 1 pinch kosher salt

- * if your kids are very unsure about broccoli I'd recommend pulsing the chopped broccoli in a food processor a few times to really break it down.
- ** I still use the red pepper flakes as they add a touch of spice, but do not make the fritters "spicy". My kids have yet to complain about it.
