Fritters are difficult to dislike and these Broccoli Fritters with Lemon Yogurt Dip are perfect for getting kids excited to eat broccoli.

Ingredients

Broccoli Fritters:

  • 3 cups broccoli chopped, fresh, 1-2 small bundles
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1/3 cup Parmesan Cheese finely grated
  • 1 medium garlic clove, minced
  • 1/2 tsp kosher salt
  • 1/4 tsp crushed red pepper flakes optional
  • 2 tbsp vegetable oil for frying; examples: canola or olive oil

Lemon Yogurt:

  • 1 cup yogurt plain, Greek
  • 1/2 medium lemon juice and zest
  • 1 tsp garlic minced, usually amounts to one clove
  • 1 pinch kosher salt

Notes

  • * if your kids are very unsure about broccoli I'd recommend pulsing the chopped broccoli in a food processor a few times to really break it down. 
  • ** I still use the red pepper flakes as they add a touch of spice, but do not make the fritters "spicy". My kids have yet to complain about it.
