- 2 cups brown rice cooked
- ¼ cup cheddar cheese finely grated, low fat
- 5 egg
- 1 cup milk skim
- 2 cups broccoli cut into bite sized pieces and blanched
- 8 oz mushrooms chopped, package
- 1 cup cheddar cheese grated, low fat, sharp
- 4 green onions sliced
- 1 pinch nutmeg optional
- salt to taste
- black pepper to taste
