Ingredients

  • 2 ribeye steaks , 1 1/2" thick (boneless)
  • 2 tablespoons vegetable oil
  • 2 teaspoons kosher salt
  • 1/2 teaspoon coarse ground black pepper

Instructions

  1. Set the oven to High Broil and place your cast iron skillet in the oven to preheat.
  2. Make sure the steaks are at room temperature.
  3. Pat dry with a paper towel.
  4. Rub with vegetable oil and season with salt and black pepper.
  5. Place steaks into the hot cast iron skillet.
  6. Place the skillet into the oven, 6-8 inches away from the top of the oven.
  7. Broil for 3 minutes.
  8. Turn steak and broil for 2 minutes.
  9. Lower heat to 450 degrees.
  10. Cook for 3-4 minutes for rare, 5-6 minutes for medium and 7-8 minutes for well done (but not incinerated).
  11. Rest for five minutes before slicing.
