Ingredients
- 2 ribeye steaks , 1 1/2" thick (boneless)
- 2 tablespoons vegetable oil
- 2 teaspoons kosher salt
- 1/2 teaspoon coarse ground black pepper
Instructions
- Set the oven to High Broil and place your cast iron skillet in the oven to preheat.
- Make sure the steaks are at room temperature.
- Pat dry with a paper towel.
- Rub with vegetable oil and season with salt and black pepper.
- Place steaks into the hot cast iron skillet.
- Place the skillet into the oven, 6-8 inches away from the top of the oven.
- Broil for 3 minutes.
- Turn steak and broil for 2 minutes.
- Lower heat to 450 degrees.
- Cook for 3-4 minutes for rare, 5-6 minutes for medium and 7-8 minutes for well done (but not incinerated).
- Rest for five minutes before slicing.
