Brookies

Brookies are a fun combination of chocolate chip cookie bars and brownies, all swirled together in one pan! They're loaded with chocolate chips and are perfectly chewy and fudgy. Recipe includes a how-to video.

Ingredients

COOKIE DOUGH
  • ¾ cup unsalted butter melted and cooled at least 10-15 minutes (see note)
  • ⅔ cup tightly packed brown sugar light or dark
  • ¼ cup white sugar
  • 1 egg + 1 egg yolk room temperature preferred
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon cornstarch
  • ¼ teaspoon baking powder
  • ¾ teaspoon salt
  • 1 cup semisweet chocolate chips
BROWNIE BATTER
  • ¾ cup unsalted butter cut into Tbsp-sized pieces
  • ½ cup semisweet chocolate chips
  • ½ cup natural cocoa powder
  • ½ cup sugar
  • 1 cup light brown sugar firmly packed
  • 2 large eggs + 1 egg yolk room temperature preferred
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup all-purpose flour
  • ½ cup mini chocolate chips optional

Instructions

  1. Preheat oven to 350F (175C) and lightly grease and flour sides and bottom of a 13x9 baking dish (or spray with baking spray). Set aside.
COOKIE DOUGH
  1. Combine melted, cooled butter and sugars in a large bowl and stir well. Add egg, egg yolk, and vanilla extract and stir again to combine. Set aside.
  2. In a separate bowl, whisk together flour, cornstarch, baking powder, and salt.
  3. Add dry ingredients to wet and stir until completely combined. Stir in chocolate chips. Set aside and prepare your Brownie batter.
BROWNIE BATTER
  1. Combine butter pieces and ½ cup chocolate chips in a large heat-proof bowl. Transfer to microwave and heat in 20-second intervals, stirring very well in between until chocolate and butter are completely melted and mixture is smooth.
  2. Add cocoa powder and stir well.
  3. Stir in sugars.
  4. Add eggs, egg yolk, vanilla extract, and salt and stir to combine.
  5. Add flour and stir until well mixed. If desired, stir in mini chocolate chips.
ASSEMBLY
  1. Alternate dolloping large spoonfuls of cookie dough and brownie batter into baking dish. Use a knife to swirl through both doughs and make sure the batter is in an even layer.
  2. Transfer to 350F (175C) oven and bake for 35-40 minutes or until a toothpick inserted in the center comes out with a few moist crumbs or clean (make sure you're not sticking the toothpick into a chocolate chip!). Take care to not over-bake your brookies or they will be dry and crumbly once cooled.
  3. Allow to cool and slice and serve. Enjoy!

Notes

  • The butter should not feel too warm to the touch or it will melt your sugars.
  • Feel free to substitute the chocolate chips for white chocolate chips, or add up to a heaping cup of your favorite nuts into the batter (I add a half cup into each batter before combining the two). Chopped walnuts work especially great here!
  • Store in an airtight container at room temperature for up to 5 days. Brookies may also be tightly wrapped and frozen for up to 3 months.
