Ingredients

  • 10 oz (280g) zucchini
  • 1 lb (500g) jumbo shrimp tail-on, peeled and deveined
  • 1/4 teaspoon salt or to taste
  • 1 pinch cayenne pepper
  • 3 tablespoons unsalted butter softened
  • 4 cloves garlic minced
  • 3 tablespoons chopped cilantro stems and leaves
  • 2 1/2 tablespoons lime juice
  • Fresh lime wedges

Instructions

  1. Cut 1 inch (2.5 cm) off both ends of the zucchinis and use a spiralizer to create the zucchini noodles. Transfer the zoodles to two serving bowls.
  2. Season the shrimp with salt and cayenne pepper.
  3. Heat a skillet and add the butter. Cook until it turns brown and bubbly, then add the garlic and sauté lightly before adding the shrimp. Stir and cook until the shrimp's surface turns white. Add the cilantro and stir to combine well with the shrimp.
  4. Add the lime juice and continue cooking the shrimp until the surface is slightly charred. Top the zoodles with the cilantro lime shrimp and gently toss to combine. Garnish with fresh lime wedges and serve immediately.
