Brown Rice & Beans Salad Recipe with Chili Hot Sauce Dressing

Ingredients

The dressing::
  • 3 tablespoons fresh lime juice
  • 2 ½ teaspoons Cholula classic hot sauce
  • 1 garlic clove minced
  • 1 ¼ teaspoons honey or agave nectar
  • ⅛ teaspoon salt
  • 2 ½ tablespoons extra-virgin olive oil
The Salad:
  • 3 cups cooked brown rice
  • 1 14 ounce can of low-sodium black beans, drained & rinsed
  • 1 red bell pepper diced
  • 1 avocado chopped
  • ¼ cup minced cilantro

Instructions

The Dressing:
    Cup of Yum
  1. In a small bowl, whisk together the lime juice, hot sauce, garlic, honey or agave nectar and salt. While whisking, slowly pour in the olive oil.
The Salad:
  1. In a large bowl, stir together the brown rice, black beans, red bell pepper, avocado and cilantro. Pour the dressing over top and stir to combine. Serve.
