Brown Sugar Glazed Apple Cake

Easy and with simple ingredients, this apple cake is moist and delicious - the perfect way to use up apples. The brown sugar glaze adds a layer of decadence and should not be skipped!

  • ¾ cup butter softened
  • 1 cup sugar
  • ½ cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla
  • 2 cups all purpose flour
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • 1 ½ cups shredded peeled apples about 3 medium apples
  • 1 cup diced peeled apples
  • ½ cup Chopped Pecans or walnuts
  • one batch brown sugar icing glaze

Instructions

  1. Preheat the oven to 350°F. Spray a 9x13 baking pan and set aside.
  2. In large bowl, beat butter and sugar with electric mixer or a stand mixer with a paddle attachment, on medium speed until light and fluffy.
  3. Beat in the eggs, one at a time, until fully incorporated.
  4. Stir in the vanilla.
  5. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Mix into the butter mixture until just combined.
  6. Stir in the apples and walnuts. Spoon into the prepared pan, tapping the bottom of the pan on the counter to release any air bubbles.
  7. Bake 35 to 45 minutes or until toothpick inserted in center of cake comes out clean.
  8. Remove the oven and place on a baking rack to cool.
  9. Prepare the brown sugar icing glaze (see notes) then swirl over the top of the cake. Slice once the icing has set.
  10. Keep stored at room temperature in a closed container for up to 5 days.

Notes

  • Prepare the brown sugar icing glaze thicker than a glaze that you drizzle, so that you can spread it over the cake like a frosting.
