Brown Sugar Glazed Apple Cake

Easy and with simple ingredients, this apple cake is moist and delicious - the perfect way to use up apples. The brown sugar glaze adds a layer of decadence and should not be skipped!

Ingredients
- ¾ cup butter softened
- 1 cup sugar
- ½ cup brown sugar
- 3 large eggs
- 1 teaspoon vanilla
- 2 cups all purpose flour
- 1 ½ teaspoon baking powder
- ½ teaspoon baking soda
- 1 ½ teaspoons cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon ground cloves
- ½ teaspoon salt
- 1 ½ cups shredded peeled apples about 3 medium apples
- 1 cup diced peeled apples
- ½ cup Chopped Pecans or walnuts
- one batch brown sugar icing glaze
Instructions
- Preheat the oven to 350°F. Spray a 9x13 baking pan and set aside.
- In large bowl, beat butter and sugar with electric mixer or a stand mixer with a paddle attachment, on medium speed until light and fluffy.
- Beat in the eggs, one at a time, until fully incorporated.
- Stir in the vanilla.
- Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Mix into the butter mixture until just combined.
- Stir in the apples and walnuts. Spoon into the prepared pan, tapping the bottom of the pan on the counter to release any air bubbles.
- Bake 35 to 45 minutes or until toothpick inserted in center of cake comes out clean.
- Remove the oven and place on a baking rack to cool.
- Prepare the brown sugar icing glaze (see notes) then swirl over the top of the cake. Slice once the icing has set.
- Keep stored at room temperature in a closed container for up to 5 days.
Notes
- Prepare the brown sugar icing glaze thicker than a glaze that you drizzle, so that you can spread it over the cake like a frosting.
