Brown Sugar Oatmeal Cookies Recipe

Ingredients

  • ¾ ¾ cup all-purpose flour
  • ½ ½ teaspoon baking soda
  • ½ ½ teaspoon EACH: cinnamon and sea salt
  • ¼ ¼ teaspoon baking powder
  • ½ ½ cup butter at room temperature
  • ¾ ¾ cup light brown sugar see notes
  • 1 1 large egg
  • 2 2 teaspoons vanilla
  • 1 1 teaspoon molasses see notes
  • 1 ½ 1 ½ cups rolled oats
  • 1 1 cup mix of raisins, chocolate chips, and/or chopped nuts see notes

  1. Preheat your oven to 350 degrees Fahrenheit. In a medium-sized bowl, whisk the flour, baking soda, cinnamon, salt, and baking powder.
  2. In a large bowl or the bowl of your stand mixer, add the butter and brown sugar and beat until light and fluffy, about 3 minutes. Add the egg, vanilla, and molasses and beat again for 2 minutes. Add the dry ingredients and mix just until incorporated.
  3. Stir in the rolled oats and any mix-ins you choose.
  4. Use a medium-sized cookie scoop (about 2 tablespoons) to scoop balls of the dough and place them onto 2 baking sheets.
  5. Bake the cookies for 11-12 minutes, until they've spread and are darkening at the edges. For perfectly round cookies, use a cup to very gently swirl the cookies as soon as they come out of the oven. Let them cool on the baking sheet for 5 minutes before transferring them to a cooling rack.

Notes

  • Molasses: If you have dark brown sugar, you can use that instead of the light brown sugar and skip the added molasses. 
  • Add-ins: The cookies in the pictures have ½ cup of raisins and ½ cup of chopped walnuts, but you can choose your own adventure here. I find that 1 cup of add-ins is the right amount for this recipe. You can also be a purist and skip the add-ins altogether!
