Ingredients

  • 3 tbsp all-purpose flour
  • ¼ tsp baking powder
  • 2 tbsp white sugar (organic for vegan-friendly)
  • 1 tbsp cocoa powder
  • 1 tbsp canola oil or substitute sunflower or coconut oil
  • 2 tbsp milk or substitute dairy free milk
  • ¼ tsp vanilla extract
  • ⅛ tsp salt
  • 1 tbsp chocolate chips
  • 1 tbsp walnuts chopped

Instructions

  1. Place dry ingredients (flour, sugar, cocoa powder, salt and baking powder) in a large microwave-safe mug. Whisk to combine.
  2. Add milk, oil, and vanilla extract, and stir to combine well.
  3. Fold in the chocolate chips and walnuts.
  4. Place mug in the microwave and cook for 60 seconds on high power.
  5. Check your mug brownie. If it's still wet, cook in the microwave for another 30 seconds. If it's just a bit raw in the center after the first 60 seconds, that’s perfect! If you keep cooking your brownie after this point, it could end up being overcooked and dry.

Notes

  • You can make a dairy-free version of this mug cake by swapping the milk for almond or soy milk.
