Ingredients

  • 2 tsp olive oil
  • 1 clove garlic minced
  • 3 lices French bread or baguette
  • yellow cherry tomatoes handful
  • red cherry tomatoes handful
  • 5-6 leaves basil sliced into ribbons, fresh
  • 2 tsp balsamic vinegar more if desired
  • salt to taste, sea salt and freshly cracked
  • black pepper to taste, sea salt and freshly cracked
  • crushed red pepper flakes to taste, pinch

Instructions

  1. Heat the olive oil in a small skillet over medium heat.  Add the minced garlic and cook, stirring constantly, for 30 seconds.  
  2. Remove the garlic from the skillet and place it into a bowl.  
  3. Place the slices of bread in the same small skillet and cook each side for 1-2 minutes or until golden brown.
  4. While the bread is cooking, slice up the tomatoes and basil, then toss them with the garlic. 
  5. Drizzle some balsamic vinegar on the tomatoes, then season with sea salt, freshly cracked pepper, and crushed red pepper flakes, to taste.  
  6. Spoon the mixture onto the bread.  Serve immediately.  Enjoy!
