Brussels Sprouts with Almond, Bacon and Cranberries

Ingredients

  • 2 lices Bacon 2 slices, cut into 1/4 thick of bacon
  • 1 lb Brussels sprouts 1 pound very thinly sliced Brussels sprouts
  • 2 tbsps dried cranberries 2 tablespoons dried cranberries
  • 0.25 cup almond 1/4 cup chopped almond
  • 2 tbsps Parmesan Cheese 2 tablespoons shaved parmesan cheese
  • 0.5 lime 1/2 squeezed lime
  • 1 tbsp olive oil 1 tablespoon olive oil

Instructions

  1. In a large pot of boiling salted water, blanch the Brussels sprouts for a couple of minutes. Drains, rinse under cold water. Place the Brussels sprouts back in the pot with cold water and ice cubes to stop the cooking.
  2. In a medium skillet place the bacon and cook over medium heat until crisp. Add the cranberries and the chopped almonds. Mix well and cook for another 1 minute.
  3. Add the Brussels sprouts to the bacon and cook while stirring for another minute or until warm.
  4. Place in a serving dish and add the olive oil, lemon juice, stir well and place the shave parmesan cheese over it.
