Brussels sprouts with chorizo and cilantro

Ingredients

  • ~10 ounces of fresh chorizo crumbled
  • ½ yellow onion diced (about 1 cup)
  • ~1 lb of brussels sprouts washed and sliced
  • 1 tbs lemon or lime juice
  • 1-2 tablespoons of finely chopped cilantro
  • salt to taste

Instructions

  1. Cook the chorizo with the diced onions over low medium heat until the chorizo is almost fully cooked.
  2. Add the sliced brussels sprouts, mix well, and continue cooking until they are fully cooked, about 20 minutes. Stir as needed.
  3. Mix in the lemon or lime juice and the chopped cilantro, taste and add salt if needed.
