Brussels sprouts with chorizo and cilantro

Easy and simple recipe for sautéed brussels sprouts with chorizo and cilantro.

Ingredients
- ~10 ounces of fresh chorizo crumbled
- ½ yellow onion diced (about 1 cup)
- ~1 lb of brussels sprouts washed and sliced
- 1 tbs lemon or lime juice
- 1-2 tablespoons of finely chopped cilantro
- salt to taste
Instructions
- Cook the chorizo with the diced onions over low medium heat until the chorizo is almost fully cooked.
- Add the sliced brussels sprouts, mix well, and continue cooking until they are fully cooked, about 20 minutes. Stir as needed.
- Mix in the lemon or lime juice and the chopped cilantro, taste and add salt if needed.
