Ingredients

Sprouts:
  • 250 g Brussels sprouts outer layer removed
  • 50 g butter or olive oil
  • salt to taste
  • black pepper to taste
Tamari mayonnaise:
  • 1 tablespoon Dijon mustard
  • 150 ml tamari
  • 50 ml lemon juice
  • 1 lemon zest
  • 1 l sunflower oil cold pressed
  • 50 ml lemon oil
  • 10 egg yolk
  • salt
  • lemon juice to taste
To serve:
  • 25 g almonds tamari flavored

Instructions

Sprouts:
    Cup of Yum
  1. Preheat oven to 180°C/ 356° F.
  2. Melt butter in a large frypan, add sprouts, season and cook to get a deep golden colour.
  3. Roast in the oven for 20-30 minutes until the sprouts are well coloured and very soft.
Tamari mayonnaise:
  1. In a robot coupe place the yolks, mustard, tamari, lemon juice and zest
  2. Stream in the oils until you have a thick mayonnaise.
  3. Adjust the seasoning with salt and lemon juice. Place into a squeeze bottle to serve.
To serve:
  1. Place the roasted brussels sprouts into a serving dish squeeze the mayonnaise over the to and microplane the tamarin almond all over.
