Description

Brussels Sprouts with Tamari & Almonds features sprouts sautéed in butter until deeply golden and then roasted until very soft. This cooking sequence develops a caramelized exterior and tender interior. The sprouts are served topped with a tamari mayonnaise crafted from egg yolks, mustard, tamari, lemon juice, zest, and cold-pressed sunflower and lemon oils whipped into a thick emulsion. This mayonnaise brings a sharp, salty, and citrusy flavor.

To finish, tamari-flavored almonds are grated over the sprouts, adding a crunchy texture and enhancing the umami notes. This dish combines layers of savory, tangy, and nutty elements for a distinctive vegetable side.

This recipe serves well as a flavorful accompaniment to mains, offering a textured contrast and a bright, seasoned profile to the simple vegetable ingredient.
