Bubble and Squeak Recipe
Bubble and Squeak made with leftover roast chicken, potatoes, mash, pumpkin and brussels sprouts, the ultimate leftover recipe. The leftovers are roughly chopped and shaped into patties, and shallowed fried until nicely golden and heavenly delicious. Quick and easy, the best way to use up any leftovers you have.
Ingredients
- ½ cup chicken leftover, shredded
- 1 cup mashed potatoes leftover
- 1 cup potato leftovers, roasted
- ⅔ cup Brussels sprouts
- ½ cup pumpkin roasted
- 1 tablespoon vegetable oil for frying
Instructions
- Chop the roasted potatoes, pumpkin and brussels sprouts roughly.
- In a bowl, add the mash, shredded roast chicken and chopped vegetables, and shape into 5 patties.
- Heat up the oil in a frying pan, and fry each patty for 1-2 minutes on each side until golden and hot.
- Serve with a fried or poached egg.
