Bublik

The bublik (plural bubliki) is the Russian and Ukrainian version of the bagel. It consists of a ring-shaped bread sprinkled with sesame or poppy.

Ingredients

  • 1¾ cups milk
  • ½ cup butter
  • 5 tablespoons caster sugar
  • 2 eggs
  • 3½ cups flour
  • 2 tablespoons active dry yeast
  • 1 tablespoon salt
  • 2 tablespoons milk (for brushing)
  • poppy seeds
  • sesame seeds

Instructions

  1. In a saucepan, boil the milk, remove it from the heat, add the butter and half the sugar. When it reaches a temperature of around 97 F (36°C), add the yeast and let it rise for 20 minutes.
  2. Separate the eggs.
  3. In the bowl of a stand mixer, add the flour and the other half of the sugar and mix.
  4. Dig a well in the center and pour in the lightly beaten egg whites (keep the yolks separate).
  5. Start kneading using the dough hook, gradually adding the yeast mixture.
  6. Add the salt and knead until a soft and homogeneous dough is formed.
  7. Cover the dough with a cloth and let it rise for an hour in a warm place, away from drafts. It must at least double in volume.
  8. Place the dough on a floured work surface and punch it down to degas for 1 minute.
  9. Divide it into 30 equal pieces.
  10. With each dough piece, form a circle about ½ inch (2 cm) thick and 5 inches (10 cm) in diameter.
  11. Cover them with a cloth and let them stand for 20 minutes in a warm place, away from drafts.
  12. Preheat the oven to 390 F (200°C).
  13. Boil a large amount of water in a large saucepan.
  14. After drilling and stretching a hole in the center of each disc of dough, dip them 2 by 2 for 15 to 20 seconds in boiling water, turning them once, gently.
  15. Remove them gradually from the boiling water using a skimmer and place them, spaced, on a baking sheet lined with parchment paper.
  16. Beat the egg yolks and the 2 tablespoons of milk and, using brush each bublik with the mixture.
  17. Generously sprinkle each bublik with sesame or poppy seeds.
  18. Bake for 15 to 20 minutes.
