Buffalo Chicken Pinwheels

Ingredients

  • 2 cups (366g) chicken cooked and shredded
  • 4 ounces (113g) cream cheese softened
  • 2 tablespoons chopped chives scallions or green onions
  • 3 tablespoons hot sauce adjust amount according to your preference
  • 6 small corn tortillas

Instructions

  1. In a mixing bowl, combine the cooked and shredded chicken, softened cream cheese, salt and hot sauce. Mix well until all the ingredients are evenly combined.
  2. Lay out one corn tortilla on a clean surface and spread a thin layer of the chicken mixture evenly over the tortilla, leaving a small border around the edges. Spread chives, scallions or green onions over the chicken mixture.
  3. Carefully roll up the tortilla tightly, starting from one end. Repeat this process with the remaining tortillas and chicken mixture.
  4. Once all the tortillas are rolled, you can slice them into pinwheels. Use a sharp knife and cut each rolled tortilla into 1-inch thick slices.
  5. Place the chicken pinwheels on a serving platter and serve immediately. You can also refrigerate them for a couple of hours to allow them to firm up before serving.

Notes

  • Warm the corn tortillas slightly to make them more pliable and prevent cracking. Wrap them in a damp paper towel and microwave for about 20-30 seconds.
  • Customize the buffalo chicken pinwheel recipe by adding your favorite ingredients like diced bell peppers, shredded cheese, or chopped jalapenos for extra flavor and texture.
  • If you prefer a milder version, reduce the amount of hot sauce or omit it completely.
  • Use flour tortillas instead of corn tortillas if you prefer.
  • Ensure that the cream cheese is softened to make it easier to mix with the other ingredients.
  • If desired, you can refrigerate the rolled tortillas for about 1-2 hours to allow them to firm up before slicing. This step is optional but can help the pinwheels hold their shape better.
