Ingredients
- 2 cups (366g) chicken cooked and shredded
- 4 ounces (113g) cream cheese softened
- 2 tablespoons chopped chives scallions or green onions
- 3 tablespoons hot sauce adjust amount according to your preference

Instructions
- In a mixing bowl, combine the cooked and shredded chicken, softened cream cheese, salt and hot sauce. Mix well until all the ingredients are evenly combined.
- Lay out one corn tortilla on a clean surface and spread a thin layer of the chicken mixture evenly over the tortilla, leaving a small border around the edges. Spread chives, scallions or green onions over the chicken mixture.
- Carefully roll up the tortilla tightly, starting from one end. Repeat this process with the remaining tortillas and chicken mixture.
- Once all the tortillas are rolled, you can slice them into pinwheels. Use a sharp knife and cut each rolled tortilla into 1-inch thick slices.
- Place the chicken pinwheels on a serving platter and serve immediately. You can also refrigerate them for a couple of hours to allow them to firm up before serving.
Notes
- Warm the corn tortillas slightly to make them more pliable and prevent cracking. Wrap them in a damp paper towel and microwave for about 20-30 seconds.
