Ingredients
- 2 boneless, skinless, chicken breasts cut into 1 inch cubes
- salt and pepper to taste
- 1 tbsp olive oil
- 2 tbsp butter
- 1/2 cup hot sauce
- 1 tbsp salad seasoning mix McCormick Salad Supreme Seasoning
- 2 heads romaine lettuce cut into small pieces
- 1 tbsp crumbled blue cheese plus 1 tbsp for garnish
- croutons
Bleu Cheese Ranch Dressing
- 1/2 cup mayonnaise
- 1/2 cup milk
- 1 1/2 tbsp ranch salad dressing mix
- 1/8 cup bleu cheese crumbles
Instructions
- Make dressing by mixing mayo, milk, and ranch mix. Stir in bleu cheese and refrigerate for 30 minutes.
- Add vegetable oil to a large skillet and cook on MED-HIGH heat. Add the chicken cubes and cook until slightly browned and cooked through.
- Reduce heat to low and add butter, hot. sauce and salad seasoning mix. Cook for about 5 minutes, stirring occasionally. Remove chicken keeping any of the hot sauce needed to toss in with the salad.
- Toss together the lettuce and bleu cheese ranch dressing. Top with the chicken pieces, croutons and bleu cheese crumbles. Serve immediately.
