Buffalo Chicken Tacos Recipe

Ingredients

  • 3 cups shredded cooked chicken
  • 1 ½ cups buffalo sauce
  • 8 flour tortillas
  • ½ cup ranch dressing
  • 2 cups shredded cheddar cheese
  • chopped green onions to garnish

Instructions

  1. Heat the chicken in a skillet. Toss with buffalo sauce.
  2. Arrange a tortilla on a plate. Spread 1 tablespoon of ranch sauce on it. Cover half of the tortilla with chicken and cheese. Fold it in half.
  3. Heat a non-stick skillet on medium heat. Add one tortilla at a time and cook until lightly golden brown and the cheese melts.
  4. Remove and serve immediately.

Notes

  • When you're short on time or don't feel like cooking, grab a rotisserie chicken from the store and shred it up. It's a quick and easy way to get flavorful, tender chicken for your tacos.
  • Before assembling your tacos, heat the tortillas in the microwave or on a griddle. Heating will make them more pliable and less likely to tear when folded. 
  • Cheddar is classic, but you can try different cheeses like pepper jack, Monterey jack, or a Mexican cheese blend. Or mix in some crumbled blue cheese for an extra tangy kick.
  • If you're sensitive to spice, start with less buffalo sauce and add more to taste.
  • You can use raw chicken; slice it thinly and cook it in the skillet for 5-10 minutes before adding the buffalo sauce.
