Notes
- When you're short on time or don't feel like cooking, grab a rotisserie chicken from the store and shred it up. It's a quick and easy way to get flavorful, tender chicken for your tacos.
- Before assembling your tacos, heat the tortillas in the microwave or on a griddle. Heating will make them more pliable and less likely to tear when folded.
- Cheddar is classic, but you can try different cheeses like pepper jack, Monterey jack, or a Mexican cheese blend. Or mix in some crumbled blue cheese for an extra tangy kick.
- If you're sensitive to spice, start with less buffalo sauce and add more to taste.
- You can use raw chicken; slice it thinly and cook it in the skillet for 5-10 minutes before adding the buffalo sauce.
