Buffalo Chickpea Wrap

Ingredients

For the Buffalo Sauce:
  • 1 tablespoon unsalted butter
  • 2 tablespoons hot sauce
  • 1 teaspoon white vinegar
  • ¼ teaspoon vegan Worcestershire sauce
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon salt
For the Wrap:
  • 2 tablespoons olive oil
  • 15 oz chickpeas canned, drained and rinsed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Pinch salt and black pepper
  • 2 tortillas large
  • 1 cup shredded lettuce
  • ½ cup shredded carrots
  • ½ cup diced celery
  • ½ cup diced tomatoes
  • ¼ cup red onion thinly sliced
  • ½ cup crumbled Feta cheese optional

Instructions

  1. To make the buffalo sauce, bring a small saucepan over medium heat, melt the butter until fully liquid.
  2. Add the hot sauce, white vinegar, Worcestershire sauce, garlic powder and salt to the melted butter. Stir until well combined.
  3. Let the mixture simmer for 2-3 minutes, stirring occasionally.
  4. Transfer to a small bowl and allow the sauce to cool slightly before using.
  5. In a medium skillet, heat the olive oil over medium heat. Add the chickpeas. Cook for 5-7 minutes, stirring occasionally, until the chickpeas are slightly crispy.
  6. Stir in the buffalo sauce, garlic powder, onion powder, salt, and pepper. Cook for an additional 2-3 minutes, ensuring the chickpeas are evenly coated with the sauce. Remove from heat.
  7. Lay out the tortillas on a clean surface. Evenly distribute the shredded lettuce, carrots, diced celery, diced tomatoes, and red onion among the wraps.
  8. Spoon the buffalo chickpeas over the vegetables in each wrap evenly. If using, sprinkle with crumbled feta cheese
  9. Fold in the sides of each tortilla, then roll them up tightly. Cut in half if desired, and serve immediately.
