Burrata Tomato Toast

Ingredients

  • 2 thick pieces of bread
  • 3 tablespoons olive oil plus extra as needed
  • 1 clove garlic
  • 1 pint cherry tomatoes
  • 1 ball burrata cheese
  • fresh basil
  • Kosher salt and freshly cracked black pepper

Instructions

  1. Preheat the oven to 400 degrees F. Drizzle the bread with the olive oil on both sides and place on a baking sheet. Bake for 10 minutes until toasted.
  2. Once toasty, remove the bread from the oven and carefully rub the garlic clove on top of the bread to infuse it with a little garlic flavor.
  3. Drizzle the cherry tomatoes with olive oil and season with salt and pepper. Transfer to the oven and roast for 10-ish minutes until bursting.
  4. Slather a big giant spoonful of burrata on top of the pieces of toast with the burst cherry tomatoes.

Notes

  • You'll never stop roasting tomatoes after you try this! They are amazing for topping all sorts of food.
