Ingredients

  • 1/3 cup unsalted butter
  • 2 pounds baby potatoes , (about 1" sized)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 2 tablespoons parsley , chopped

Instructions

  1. To a large heavy-bottomed skillet add the butter on medium-low heat.
  2. Add the potatoes, lower the heat to low, and shake to coat the potatoes.
  3. Cover with a lid and cook for 30 minutes, shaking the pan every 5 minutes.
  4. Garnish with parsley to serve.
