Butterfinger Smoothie
This Butterfinger Smoothie blends oat milk, frozen banana, zucchini, chocolate protein powder, peanut butter, dates, and goji berries to create a creamy, textured beverage with bursts of fruity bits. The frozen ingredients give it a thick, chilled consistency, while the peanut butter adds a rich nutty note. The quick blending preserves some of the goji berries’ chewy texture, offering a contrast to the smooth base. It's a versatile smoothie suited for a nutritious breakfast or snack when you want a treat with protein and subtle natural sweetness.
Ingredients
- ½ cup oat milk or any non-dairy milk of choice
- ½ medium banana frozen
- ¼ cup zucchini frozen, chopped
- 1 coop (25 grams) chocolate protein powder I used Nuzest
- 1 medium Medjool date pitted
- 1 Tablespoon peanut butter or almond butter
- 4-5 ice cubes
- 2-3 Tablespoons Goji berries
Instructions
- Place all ingredients except goji berries into a high speed blender. Blend until smooth.
- Add goji berries and blend for a few seconds, until just combined, so there are still some bits and chunks of the berries.
- Pour into a glass and enjoy!
Notes
- Omitting the Medjool date reduces sugar content for a less sweet smoothie.
- Use frozen banana and zucchini to achieve a thick, cold texture without adding ice.
- Add goji berries last and blend briefly to retain some chunkiness and texture.
