  • ½ cup oat milk or any non-dairy milk of choice
  • ½ medium banana frozen
  • ¼ cup zucchini frozen, chopped
  • 1 coop (25 grams) chocolate protein powder I used Nuzest
  • 1 medium Medjool date pitted
  • 1 Tablespoon peanut butter or almond butter
  • 4-5 ice cubes
  • 2-3 Tablespoons Goji berries

Instructions

  1. Place all ingredients except goji berries into a high speed blender. Blend until smooth.
  2. Add goji berries and blend for a few seconds, until just combined, so there are still some bits and chunks of the berries.
  3. Pour into a glass and enjoy!

Notes

  • Omitting the Medjool date reduces sugar content for a less sweet smoothie.
  • Use frozen banana and zucchini to achieve a thick, cold texture without adding ice.
  • Add goji berries last and blend briefly to retain some chunkiness and texture.
