- Make sure to peel and dice your butternut squash and sweet potato into ¼-inch cubes for even cooking and a nice, uniform texture in your hash.
- When mincing your red onion, sage, and rosemary, take your time to chop them finely. This will help their flavors to meld nicely with the other ingredients and prevent any one flavor from overpower the dish.
- We recommend using avocado oil for this recipe because of its high smoke point and subtle flavor.
- If you want to make this hash ahead of time, you can prep all of your ingredients the day before and store them in an airtight container in the refrigerator.
- Serve your butternut squash hash as a side dish for brunch or as a hearty, vegetarian main course. It pairs well with dishes like eggs, bacon, and sausage.
- This butternut squash hash is a great make-ahead dish. It keeps well in the fridge for a few days and can be easily reheated for a quick and delicious meal.
