Ingredients

  • 1 butternut squash peeled, seeded, and cubed, medium
  • 1 tablespoon olive oil
  • salt to taste
  • black pepper to taste
  • 8 cups salad greens mixed
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts toasted, chopped
  • 1/4 cup feta cheese crumbled
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1/2 cup extra virgin olive oil

Instructions

  1. Preheat oven to 400°F. Toss cubed butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 30 minutes, or until tender and lightly browned.
  2. In a small bowl, whisk together balsamic vinegar, Dijon mustard, and honey. Gradually whisk in extra virgin olive oil until emulsified. Season the dressing with salt and pepper.
  3. In a large bowl, combine mixed greens, roasted butternut squash, dried cranberries, toasted walnuts, and feta cheese. Drizzle with the dressing and toss to combine.
