Ingredients

  • 2 cups self rising flour
  • 1 cup sugar
  • 1/2 teaspoon baking soda
  • 1/2 cup Butter, melted
  • 1 teaspoon vanilla
  • 2 large eggs, beaten
  • 2 large bananas, mashed
  • 3/4 cup butterscotch chips

  1. Preheat oven to 350 degrees. Grease and flour a 9x5 loaf pan and set aside.
  2. In a large mixing bowl, combine flour, sugar, and baking soda. In a medium bowl, mix together butter, vanilla, eggs, and mashed bananas. Add banana mixture to the dry ingredients and mix until just combined. Carefully mix in butterscotch chips.
  3. Pour batter into prepared baking pan and bake in preheated oven for 55-65 minutes, until a toothpick inserted in center comes out clean.
  4. Remove from oven and place on a wire rack to cool. Enjoy!
