Butterscotch Brownie Recipe

Chewy butterscotch brownies have a brown sugar base and are filled with butterscotch chips. They are rich and absolutely yummy!

Ingredients

  • 1 c unsalted butter melted
  • 1 1/4 c brown sugar packed
  • 1/2 c sugar
  • 2 large eggs room temp
  • 1 egg yolk room temp
  • 2 tsp vanilla extract
  • 2 1/2 c all-purpose flour
  • 2 tsp cornstarch
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 2/3 c butterscotch chips
  • 1 c chopped walnuts optional

Instructions

  1. Prepare a 9x13 baking dish by lining it with parchment paper and preheat the oven to 350°F.
  2. Place the butter in a large bowl and melt it. Add brown and white sugar to the bowl and mix.
  3. Mix in the eggs, egg yolk, and vanilla.
  4. Sift the flour in a separate bowl. Add the cornstarch, baking powder and salt and whisk together.
  5. Slowly stir in the flour mixture into the sugar mixture until just combined.
  6. Add the butterscotch chips & walnuts and fold them into the batter.
  7. Spread the batter evenly into the pan and bake for 25-28 minutes.
  8. Remove from the oven and add a few more butterscotch chips to the top while it is still hot. Let cool. Cut with a plastic knife and Enjoy!
