Buttery Boiled Potatoes
Buttery Boiled Potatoes are small new potatoes boiled until tender and then tossed with melted butter, olive oil, and fresh herbs like rosemary, parsley, and dill. The boiling process softens the potatoes while still keeping their shape, and the combination of butter and olive oil adds a rich, smooth finish. Freshly chopped herbs provide an aromatic, fresh note that complements the mild potato flavor. This recipe works well as a comforting side dish with a variety of meals.
Ingredients
- 2 lbs potato washed and scrubed, new, small
- 1 tablespoon salt for the water
- 2 tablespoons butter melted, unsalted
- 2 tablespoons extra virgin olive oil
- 1 teaspoon kosher salt or to taste
- 1/2 teaspoon black pepper or to taste, freshly ground
- 3 prigs rosemary fresh
Garnish:
- 1 tablespoon parsley finely chopped
- 1 tablespoon dill finely chopped
Instructions
- Choose potatoes that are roughly the same size.
- After the potatoes have been cleaned, cut the larger ones in halves or quarters so the pieces are about the same size.
- Add them to a pot of water, the spuds should be covered in 1-inch of water. Then add 1 tablespoon of salt and the rosemary.
- Bring to a boil over medium-high heat, then reduce heat to low-medium, and simmer until the potatoes are fork-tender. This may take 10-20 minutes, depending on the size of the potatoes, check the blog post for details.
- Once done cooking, drain and add the potatoes back to the pot or to a mixing bowl.
- Drizzle with melted butter and olive oil. Season with salt and black pepper to taste.
- Garnish with freshly chopped herbs and toss to combine.
- Keep covered until ready to serve.
