Buttery Boiled Potatoes
Description
Buttery Boiled Potatoes involves cooking washed and similarly sized new potatoes in salted water with rosemary until they become fork-tender. After boiling, the potatoes are drained and coated with melted unsalted butter and extra virgin olive oil, then seasoned with kosher salt and freshly ground black pepper. Fresh parsley and dill are added last to give brightness and herbal aroma. The result is tender potatoes with a smooth, buttery coating and fresh herb flavor that enhances their natural earthiness.
The cooking method gently softens the potatoes without breaking them apart. Tossing in butter and olive oil while still warm helps the fat absorb into the potatoes, creating a rich mouthfeel. The fresh rosemary infused during boiling adds a hint of pine-like fragrance, while the parsley and dill garnish brighten the dish.
This preparation pairs well as a side dish to roasted or grilled meats and fish, or as part of a simple home-cooked meal. Keeping the potatoes covered after tossing in the fats ensures they stay warm and moist until served.
