Buttery Herb Boiled Potatoes

Ingredients

  • 2-3 pounds yellow baby potatoes
  • 4 tablespoons butter
  • 1 tablespoons chopped fresh parsley
  • 1 tablespoons minced chives
  • 1 teaspoon minced fresh rosemary
  • 1 teaspoon minced fresh thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper

  1. Bring a large pot of salted water to a boil.
  2. Meanwhile, wash the baby potatoes. If they are larger, slice them in half; if they are bite-sized, leave them whole.
  3. Add the potatoes to the boiling water and cook until they are fork-tender, about 14–18 minutes.
  4. Drain the potatoes and transfer them to a large mixing bowl. Immediately add the melted butter, parsley, chives, rosemary, thyme, salt, and black pepper. Toss until the potatoes are evenly coated.
  5. Taste and add additional salt if needed. Serve warm and enjoy!
