Ingredients

  • 6 large eggs
  • 3 cloves garlic minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian Herbs
  • 1 tablespoon fresh parsley chopped
  • 1/2 teaspoon kosher salt
  • freshly ground black pepper to taste
  • 6 cups shredded cabbage
  • 1/2 small yellow onion thinly sliced
  • 2 tablespoons vegetable oil
Garnish:
  • parsley
  • sour cream

Instructions

  1. In a large bowl, whisk together eggs, garlic, paprika, Italian dried herbs, fresh parsley, and pepper salt.
  2. Add shredded cabbage and onion and toss to combine.
  3. In a large skillet, over medium-high heat, add oil. Wait for the oil to heat up.
  4. Form and divide the mixture into patties in the pan and press with a spatula to flatten.
  5. Cook until golden and tender, about 3-4 minutes per side.
  6. Serve part of a breakfast spread, as a side dish or as an appetizer.
