Cabbage Roll Soup

Ingredients

  • 2 tablespoons olive oil
  • 2 pounds (907g) ground turkey
  • 5 cups (445g) cabbage, roughly chopped about 1 smaller cabbage head
  • 1 teaspoon salt
  • black pepper to taste
  • 2 bay leaves
  • ¼ cups (46g) uncooked rice rinsed
  • 1 cup (150g) diced onion
  • ¾ cup (150g) carrots sliced into half-moons
  • 5 cups (1.18L) broth beef or chicken
  • 1 teaspoon Italian seasoning
  • 14 ½ ounces (411g) canned diced tomatoes or crushed tomatoes
  • 1 tablespoon Worcestershire sauce 
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • chopped parsley for garnish

Instructions

  1. Heat oil in a large 4-quart Dutch oven over medium heat.
  2. Add the ground turkey and cook, breaking it up with a wooden spatula as it browns. Season with salt and pepper.
  3. Stir in the onion, carrots, Italian seasoning, and paprika. Cook for a few more minutes until the vegetables start to soften.
  4. Add the tomato paste and cook until it begins to caramelize.
  5. Pour in ½ cup of broth to deglaze the pot, scraping up any brown bits from the bottom.
  6. Add in the rest of the broth, along with diced tomatoes, uncooked rice, cabbage, bay leaves, and Worcestershire sauce. Stir well to combine.
  7. Bring the soup to a boil, then reduce the heat and let it simmer for 35 minutes, or until the rice is tender and the cabbage has softened.
  8. Remove and discard the bay leaf before serving.

Notes

  • If you want to use brown rice in this recipe, I recommend parboiling it first, as it will take longer to cook than white rice. 
  • I prefer larger chunks of cabbage in this soup for texture, but you can slice the cabbage into longer, thinner strips instead.
  • You can easily double this recipe for meal prep or when you need to feed a crowd.
  • Feel free to add more veggies – bell pepper and mushrooms are great additions.
  • Like it hot? Add some red pepper flakes or a dash of your favorite hot sauce.
  • Try serving topped with a dollop of sour cream or Greek yogurt.
  • Storage – keep in an airtight container inside the fridge for up to 4 days, or in the freezer for up to 3 months.
