																							Ingredients
- 2 tablespoons olive oil
 - 2 pounds (907g) ground turkey
 - 5 cups (445g) cabbage, roughly chopped about 1 smaller cabbage head
 - 1 teaspoon salt
 - black pepper to taste
 - 2 bay leaves
 - ¼ cups (46g) uncooked rice rinsed
 - 1 cup (150g) diced onion
 - ¾ cup (150g) carrots sliced into half-moons
 - 5 cups (1.18L) broth beef or chicken
 - 1 teaspoon Italian seasoning
 - 14 ½ ounces (411g) canned diced tomatoes or crushed tomatoes
 - 1 tablespoon Worcestershire sauce
 - 2 tablespoons tomato paste
 - 1 teaspoon paprika
 - chopped parsley for garnish
 
Instructions
- Heat oil in a large 4-quart Dutch oven over medium heat.
 - Add the ground turkey and cook, breaking it up with a wooden spatula as it browns. Season with salt and pepper.
 - Stir in the onion, carrots, Italian seasoning, and paprika. Cook for a few more minutes until the vegetables start to soften.
 - Add the tomato paste and cook until it begins to caramelize.
 - Pour in ½ cup of broth to deglaze the pot, scraping up any brown bits from the bottom.
 - Add in the rest of the broth, along with diced tomatoes, uncooked rice, cabbage, bay leaves, and Worcestershire sauce. Stir well to combine.
 - Bring the soup to a boil, then reduce the heat and let it simmer for 35 minutes, or until the rice is tender and the cabbage has softened.
 - Remove and discard the bay leaf before serving.

																Notes
- If you want to use brown rice in this recipe, I recommend parboiling it first, as it will take longer to cook than white rice.
 - I prefer larger chunks of cabbage in this soup for texture, but you can slice the cabbage into longer, thinner strips instead.
 - You can easily double this recipe for meal prep or when you need to feed a crowd.
 - Feel free to add more veggies – bell pepper and mushrooms are great additions.
 - Like it hot? Add some red pepper flakes or a dash of your favorite hot sauce.
 - Try serving topped with a dollop of sour cream or Greek yogurt.
 - Storage – keep in an airtight container inside the fridge for up to 4 days, or in the freezer for up to 3 months.
