Cabbage Salad Recipe
This cabbage salad mixes shredded green and red cabbage with shredded carrots and chopped green onions, tossed in a tangy apple cider vinegar dressing flavored with garlic, fresh oregano, lemon, and Dijon mustard. The salad is allowed to rest 20-30 minutes to soften and blend the flavors, making it a crisp yet juicy side dish with a bright, herbaceous character.
Ingredients
Salad:
- 6 cups green cabbage shredded
- 3 cups red cabbage shredded
- 1 1/2 cups carrot shredded
- 1/4 cup green onions chopped
Dressing:
- 1/4 cup apple cider vinegar
- 2 cloves garlic minced
- 2 tablespoons olive oil
- 1 tablespoon oregano very finely chopped, fresh
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 2 tablespoons white sugar or to taste
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
Instructions
- Add Dressing ingredients to a jar and shake well, or add them to a medium bowl and whisk well.
- Add Salad ingredients to a large bowl or salad serving plate. Pour over Dressing on top, and toss. Set aside salad for 20 - 30 minutes, it will become a bit more tender and juicy!
- Serve garnished with fresh oregano and lemon wedges.
