Salad:

  • 6 cups green cabbage shredded
  • 3 cups red cabbage shredded
  • 1 1/2 cups carrot shredded
  • 1/4 cup green onions chopped

Dressing:

  • 1/4 cup apple cider vinegar
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon oregano very finely chopped, fresh
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 2 tablespoons white sugar or to taste
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt

Instructions

  1. Add Dressing ingredients to a jar and shake well, or add them to a medium bowl and whisk well.
  2. Add Salad ingredients to a large bowl or salad serving plate. Pour over Dressing on top, and toss. Set aside salad for 20 - 30 minutes, it will become a bit more tender and juicy!
  3. Serve garnished with fresh oregano and lemon wedges.
