Ingredients
- 1 tablespoon olive oil
- 1 white onion diced
- 3 cloves garlic minced
- 1/2 small green cabbage chopped, head
- 2 cups carrot slivered
- 1 red bell pepper diced ( optional)
- 14 ounces diced tomatoes with spices canned
- 4 cups chicken broth strong
Instructions
- In a large stockpot, fry the onions in the olive oil until soft. Add in the garlic and sautee until light brown.
- Add in the rest of the vegetables, the tomatoes and the broth.
- Simmer until the vegetables are soft , around 40-50 minutes, then serve.
